Mocha-Buttercream Frosting


2 1/2 teaspoons instant coffee powder
2 tablespoons water
3/4 cup plus 2 tablespoons butter, softened
1 tablespoon plus 2 teaspoons cocoa
7 cups sifted powdered sugar
1/3 cup half-and-half
1 teaspoon vanilla extract


Dissolve instant coffee powder in water, set aside.
Cream butter in a large mixing bowl, add coffee mixture and cocoa.
Gradually add powdered sugar alternately with half-and-half, beating until mixture is light and fluffy.
